Sautéed Carrots with Orange and Cumin
- Carrots (trimmed & peeled) - 1½ lbs.
- Butter - 2 tbsp
- Cumin seed - 1 pinch
- Ground cumin - 1/8 tsp
- Salt & pepper - to taste
- Orange juice - 6 oz.
Cut carrots into thin slices. Over medium heat, sauté carrots with butter for 4 minutes. Add cumin, salt & pepper, and orange juice and cover loosely. Reduce heat to low and cook out all liquid.
