Grilled Balsamic Asparagus
- Asparagus - 2 bunches
- Olive oil - 2 tbsp
- Balsamic vinegar - ¼ cup
- Crushed garlic - 1 tbsp
- Salt & pepper - to taste
Put asparagus, olive oil, Balsamic vinegar, and garlic in a gallon Ziploc bag. Incorporate all ingredients well and let sit for about 30 minutes. Heat grill to medium-high and put asparagus on the grill. Salt and pepper on grill; serve when asparagus is bright green in color.
Orange Asparagus
- Asparagus - 2 bunches
- Vegetable stock - 1 can
- Garlic - 1 tbsp
- Olive oil - 1 tbsp
- Orange - 1
- Butter - 1tbsp
- Salt & pepper - to taste
Heat sauté pan to medium-high, add oil, asparagus, and garlic. Add 1/3 of the vegetable stock and cook down, repeat process two more times until liquid is cooked out. Use a veggie peeler and shave orange. Fine chop the zest and add 2 tbsp to asparagus. Add juice from orange and turn heat to medium, add butter and mix well. Finally, Salt and pepper to taste and enjoy.
