Jicama and Orange Salad
- Jicama (peeled & sliced ¼ inch strips) 2
- Oranges (segmented) 3
- Cilantro (finely chopped) 2 tbsp
- Mint (finely chopped) 1 tsp
- Red onion (sliced) ½ onion
- Sesame oil ½ cup
- White wine vinegar ½ cup
- Mustard 1 tsp
- Salt & pepper to taste
Place Jicama and onion in bowl and set aside. Wisk white wine vinegar and mustard in metal bowl and slowly add sesame oil until all is mixed. Add to veggies along with herbs and mix well. Adjust seasoning with salt and pepper. Fold in oranges gently at the end.
