Kiwi Salsa

  • Kiwi (peeled & chopped small) - 8
  • Jalapeño (chopped fine) - 1-2
  • Red onion (chopped fine) - ¼ onion
  • Pineapple (diced small) - ¼ pineapple
  • Olive oil - 1 tbsp
  • Red pepper (chopped fine) - ½ pepper
  • Cilantro (chopped fine) - 2 tbsp
  • Honey - 1tsp
  • Salt & pepper to taste

Mix all ingredients well and season at the end. This salsa goes great with fish and chicken.

Roasted Kabocha Squash halves

  • Kabocha Squash (halved, seeds removed) - 2
  • Shallots (diced) - 1/4 cup
  • Brown sugar - 1/2 cup
  • Butter - 1 to 2 tbsp
  • Salt & pepper - to taste

Halve squash and clean seeds out with a spoon. Spray roasting pan (sheet) with Pam or a substitute and place squash skin side down in pan. Place shallots, butter, and the brown sugar on the flesh of the squash. Sprinkle with salt and pepper. Place in oven on low heat 275-300 and bake for 45-60 minutes depending on size. Serve or cool down and take off skin. Mash well to make a puree. Now you can make pies, sweet potato substitutes, muffins, or bread!
